The Best Potato Doughnuts

Steps

  1. Steam the potatoes until tender.
  2. Test them with a fork; once they pierce easily, turn off the stove.
  3. Mash the potatoes while still hot, weigh out 200 g, then let it come down to room temperature.
  4. In a mixing bowl, combine all the ingredients except the butter.
  5. Mix on low speed until everything comes together evenly.
  6. Raise to speed three and mix until the dough is half developed.
  7. Once half developed, add 60 g unsalted butter.
  8. Mix again on low speed until the butter is fully worked in.
  9. Raise to speed three and mix for about 10 minutes until the dough is smooth and elastic.
  10. Check with the window pane test; the dough is ready when it stretches without tearing easily.
  11. Move the dough to a bowl brushed with butter so it will not stick.
  12. Cover and rest for about 30 minutes.
  13. After 30 minutes, knock the dough back to release the air inside.
  14. Turn the dough out onto the work surface.
  15. Roll the dough out to about 8 mm thick.
  16. Cut it out with a doughnut cutter.
  17. Set the cut doughnuts on baking paper dusted with flour so they do not stick.
  18. Do not throw away the centre rounds, they can be fried too.
  19. Gather the scraps, round them up again, then cover and rest them 10 to 15 minutes before rolling out again.
  20. Keep the cut doughnuts covered with a cloth so they do not dry out.
  21. Prove the doughnuts for about 30 to 45 minutes.
  22. Heat the frying oil.
  23. Press a doughnut lightly; if it feels risen and airy it is ready to fry.
  24. Lower the doughnuts into the hot oil and fry over very low heat.
  25. Once the underside is golden brown, flip them over.
  26. Once cooked, lift them out and drain.
  27. Fry the little centre rounds as well.
  28. Dust the doughnuts with doughnut sugar and serve.
