Cornstarch Doughnuts, No Potato

  1. In a mixing bowl combine 300 g high protein flour, 60 g medium protein flour, 40 g cornstarch, 40 g sugar and 6 g instant yeast, then stir well.
  2. Pour in 40 g sweetened condensed milk.
  3. Add the whole egg.
  4. Pour in liquid milk until the egg and milk together weigh 225 g.
  5. Mix on medium speed until the dough comes together evenly.
  6. Raise to high speed and mix until the dough is half developed.
  7. Add 1/2 tsp salt and 50 g margarine.
  8. Mix again on medium speed until the margarine is worked into the dough.
  9. Raise to high speed and mix until the dough is smooth and elastic.
  10. Check with the window pane test; the dough should stretch thin without tearing.
  11. Turn the dough out onto the work surface and knead it briefly.
  12. Divide and weigh the dough, here 40 g per piece.
  13. Round each piece by pulling the sides into the centre until the surface is smooth.
  14. Set each ball on its own square of baking paper.
  15. Always keep the dough covered with a cloth so it does not dry out.
  16. Take the pieces in the order you rounded them, flatten each one, then roll it out with a rolling pin.
  17. Punch a hole in the centre with a piping nozzle, a bottle cap or anything similar.
  18. Do not throw away the centre pieces, they can be fried as doughnut holes.
  19. Return each one to its place and continue until all the dough is shaped.
  20. Cover and rest the doughnuts until they have risen almost three times in size.
  21. Heat plenty of oil over low heat; it does not need to be very hot.
  22. Lower the doughnuts into the oil together with their baking paper, carefully.
  23. Once in the oil the baking paper releases by itself and can be pulled straight out.
  24. When the underside is golden brown, flip once only, do not keep turning them.
  25. Once both sides are golden brown, lift them out and drain.
  26. Finish with doughnut sugar or any topping you like.
