Ingredients

Steps

  1. Take 150 g grated coconut using only the white part, add 1 tbsp cornstarch and half a teaspoon of salt, then stir until evenly combined.
  2. Steam the grated coconut for about 10 minutes so it does not spoil quickly, then take it out and stir it again until evenly combined.
  3. Grease the mould thinly with cooking oil over its whole surface, then set it aside.
  4. Prepare a bowl and add 2 eggs, 120 g granulated sugar, half a teaspoon of emulsifier and half a teaspoon of vanilla powder.
  5. Beat on maximum speed for about five minutes until the batter is pale, risen, thick and holds a ribbon.
  6. Sift 150 g wheat flour, 1 tbsp tapioca starch and half a teaspoon of salt into the batter.
  7. Stir, or mix on low speed, only until evenly combined; do not mix for too long.
  8. Add 130 ml coconut milk from two sachets of instant coconut milk, then mix on the lowest speed until evenly combined.
  9. Add 1 tsp pandan paste, then fold from the bottom up until evenly combined.
  10. If the colour is not bright enough, add three drops of green food colouring, then fold again until no liquid is left at the bottom.
  11. Put the steamed grated coconut into the moulds, then press it down with a spoon.
  12. Pour the batter into the moulds, then level it with a spatula or spoon.
  13. Tap the tray a few times so trapped air can escape.
  14. Put the tray into a steamer whose water is already boiling and steam for about 15 minutes over medium heat, with the lid wrapped in a clean cloth.
  15. After 15 minutes, test with a skewer; if no batter clings to it, take the tray out of the steamer.
  16. Leave for about five minutes until the steam has gone, then turn the cakes out of the moulds.
  17. Cut the putu ayu with a sharp knife so the texture stays neat.
