Ingredients

Steps

  1. Put the white part of the grated coconut, the cornstarch, and salt into a heatproof bowl, then stir until evenly combined.
  2. Steam the coconut for about 10 minutes over medium heat so it does not spoil quickly, then take it out, stir it, and set it aside.
  3. Put the eggs, sugar, emulsifier, salt, and vanilla powder into a bowl.
  4. Beat on maximum speed for about seven minutes until the batter is risen, thick, and holds a ribbon.
  5. Add the wheat flour and tapioca flour, sifting them in, stir briefly first so the flour does not fly about, then beat on the lowest speed.
  6. While beating, pour in the instant coconut milk in stages.
  7. Blend five pandan leaves with water, strain it, then take 50 ml of the pandan juice and add it to the batter.
  8. Turn off the mixer, then add pandan paste if the colour is not green enough.
  9. Fold gently from the bottom up until no liquid is left settling in the batter.
  10. Brush the putu ayu moulds with a thin layer of cooking oil.
  11. Put enough of the cooled grated coconut into each mould, then press it down.
  12. Pour the batter into the moulds until almost full.
  13. Tap the moulds several times so the trapped air in the batter can escape.
  14. Steam in a steamer with already boiling water for about 10 minutes over medium heat, with the steamer lid wrapped in a clean cloth.
  15. Test with a skewer to make sure the cakes are done, then take them out of the steamer.
  16. Once the cakes have cooled a little, turn them out of the moulds.
