Steps

  1. Bring water to the boil in a pot, add 500 g chicken meat and boil for about 10 minutes over medium heat until tender.
  2. Test the chicken with a fork; once tender, lift it out and drain, let it cool briefly, then shred the meat.
  3. Prepare a pan, add 3 tbsp margarine, and once it melts add 4 crushed shallots, 4 crushed cloves of garlic and 1 onion chopped small, then fry until fragrant.
  4. Add 3 carrots cut into small cubes and the shredded chicken.
  5. Add 2 tbsp oyster sauce, 4 tbsp sweet soy sauce, half a teaspoon of powdered stock, half a teaspoon of ground pepper, half a teaspoon of salt and 1 tsp granulated sugar, then stir until evenly combined.
  6. Add 70 ml water and cook until the liquid reduces and the carrot is tender, then taste and adjust.
  7. Dissolve 2 tbsp wheat flour in 50 ml water, pour it into the pan and stir until evenly combined.
  8. Turn off the heat and let the filling cool completely.
  9. Prepare 120 ml warm water, add 1 tsp granulated sugar and 1 tsp instant yeast, then stir until evenly combined.
  10. Cover the container and leave it for about three minutes until the yeast mixture rises and foams.
  11. Prepare a bowl, add 250 g high-protein wheat flour, 2 tbsp milk powder and 3 tbsp powdered sugar, then stir until evenly combined.
  12. Add 2 egg yolks and the activated yeast mixture, then stir with a spatula until evenly combined.
  13. Knead the dough by hand until evenly combined, adding a little water one tablespoon at a time if it feels too dry.
  14. Add a quarter teaspoon of salt and 2 tbsp margarine, then knead for about three minutes until the margarine is worked through the dough.
  15. Shape the dough into a ball, return it to the bowl, cover with cling film, then rest for about 60 minutes until doubled in size.
  16. After about 60 minutes, knock the dough back to break the air bubbles, then shape it into a ball again.
  17. Divide the dough into 10 equal pieces of about 47 g each, roll them into smooth balls, then line them up in order.
  18. Flatten a ball, put enough filling in the centre, then wrap and seal it tightly so it does not burst while frying.
  19. Roll it back into a ball then flatten it slightly, and repeat until all the dough is filled.
  20. Cover the buns with a clean cloth and rest them for about 10 minutes until slightly risen.
  21. Beat 2 eggs lightly, dip each bun in the egg, then coat it evenly in breadcrumbs.
  22. Heat oil in a pan over low heat, then add as many buns as fit.
  23. Fry on the lowest heat until golden, turning them only once so the bread does not soak up much oil.
  24. Once both sides are golden, lift the buns out of the oil and drain them.
