Pandan Bread Rolls with Sweet Coconut Filling

  1. Mix the high protein flour with the instant yeast for 45 seconds to a minute so the yeast does not sit directly against the salt.
  2. Add the granulated sugar, milk powder and salt and mix briefly.
  3. Add the egg, then pour in the cold instant coconut milk.
  4. Add about a quarter to half a teaspoon of pandan paste, then pour in the cold water while mixing.
  5. Add the softened unsalted butter and mix on low speed, then raise the speed once it is incorporated.
  6. Knead until the dough is smooth and elastic and pulls away from the bowl.
  7. Round the dough, put it in a buttered bowl, cover, and rest for 30 minutes.
  8. For the coconut filling, cook the granulated sugar with the water, a pandan leaf and a little salt until it boils and the sugar dissolves.
  9. Add the grated coconut and cook over low heat until the coconut absorbs all the syrup.
  10. Cook until the liquid has gone but the coconut is still moist, not dry like serundeng, then take it off and let it cool.
  11. Knock down the risen dough, then weigh it into portions of about 55 to 60 g and round them.
  12. Cover the dough balls and rest them for another 15 minutes.
  13. Flatten each ball with buttered hands until all the air is knocked out.
  14. Widen the dough and fill it with about 2 tablespoons of the cooled coconut filling.
  15. Seal it up as tightly as you can and roll it back into a ball.
  16. Arrange them on a tray with space between them and press them down slightly.
  17. Flatten them a little more, then snip the edges into five sections with scissors so they look like flowers.
  18. Cover and give a final proof of 40 to 50 minutes until doubled in size. After 20 minutes, preheat the oven to 170 to 180 C.
  19. For the egg wash, mix the egg yolk with the liquid milk until combined.
  20. Brush the rolls thinly with the egg wash so they come out glossy.
  21. Sprinkle with sesame seeds.
  22. Bake in the preheated oven for about 13 to 14 minutes, then cool them on a rack.
