Coconut Pudding with Pandan Moss Layer

  1. Mix the coconut water, granulated sugar, and agar agar powder in a pot until fully combined before turning on the heat.
  2. Cook over heat, stirring occasionally, until it boils and the agar agar is completely dissolved.
  3. Pour the mixture into a jug so it cools faster, then wait until it is lukewarm, around 40 to 45 degrees.
  4. Pour a little of the coconut pudding into a 20 cm pudding mold, then add the soaked basil seeds.
  5. Arrange the drained coconut flesh and the nata de coco over the surface.
  6. Pour in more of the mixture slowly so nothing sinks, then repeat the layering until everything is used up.
  7. Let the coconut pudding set at room temperature, not in the fridge.
  8. Combine the water, coconut milk, sugar, vanilla, salt, pandan paste, 1 lightly beaten egg, and the agar agar powder, then whisk until even.
  9. Cook the mixture, stirring only occasionally so the egg sets into large curds, until it boils.
  10. Take the pandan pudding off the heat and let it cool to lukewarm.
  11. Prick the surface of the set coconut pudding so the next layer will stick to it.
  12. Pour the lukewarm moss pudding over the coconut layer slowly.
  13. Let it form a skin at room temperature, then chill it in the fridge until fully set.
  14. Loosen the edges, then turn the pudding out onto a plate.
