Open offline saves

Ingredients

Moss Pudding Layer:

Chocolate Pudding Layer:

Steps

  1. Prepare a pot, add 250 g granulated sugar and 2 packets of white agar-agar powder, then stir until evenly combined so the agar-agar does not clump.
  2. Add 3 lightly beaten eggs.
  3. Add 1 tsp vanilla powder, half a teaspoon of salt, 200 ml instant coconut milk and 1300 ml water, then stir until evenly combined.
  4. Add 1 tsp pandan paste, then stir until evenly combined.
  5. Add another teaspoon of pandan paste if the colour is still too pale, then stir until evenly combined.
  6. Turn on medium-low heat and cook the mixture until it boils, stirring constantly so the strands come out small, fine and close together.
  7. Once the mixture boils and the strands have formed, turn off the heat and let the steam die down.
  8. Pour the mixture into a 24 cm mould, then leave it to set.
  9. For the chocolate layer, prepare a pot and add 100 g granulated sugar and 1 packet of chocolate agar-agar powder, then stir until evenly combined.
  10. Add 2 tbsp cocoa powder, 1 tbsp cornstarch and part of the 800 ml chocolate milk, then stir until evenly combined.
  11. Add the rest of the milk and a pinch of salt, then stir again until evenly combined.
  12. Add 100 g dark cooking chocolate, then cook over medium heat, stirring constantly, until it boils and thickens.
  13. Once it boils and bubbles, turn off the heat and let it stand briefly until the steam has gone.
  14. Make sure the first layer has set and is no longer sticky, then pour the chocolate mixture on slowly and spread out so the first layer does not sink.
  15. Leave the pudding until set and fairly firm, then chill it in the fridge for about two hours without sliding or shaking it.
  16. Turn the pudding out of the mould, then slice and serve.
