Corn and Pandan Layered Coconut Pudding

Open offline saves

Ingredients

Corn Pudding:

Steps

  1. For the moss pudding layer, mix 1 packet of plain agar-agar powder, 100 g granulated sugar, and 1/4 tsp salt in a pot until evenly combined.
  2. Pour in 650 ml medium-thick coconut milk, 100 ml pandan juice, 1 lightly beaten egg, and 1/2 tsp vanilla, then stir until evenly combined.
  3. Cook over medium-low heat without stirring until it boils, so plenty of the mossy strands form.
  4. Once it boils, stir gently for a moment to spread the strands, then turn off the heat and let the steam die down.
  5. Pour the mixture into a 20x20 cm pan moistened with water and leave it until the pudding sets.
  6. For the corn pudding, wash 1 kg of corn and strip the kernels from the cobs.
  7. Blend the corn with 500 ml coconut milk until smooth, then strain and squeeze it to separate out the pulp.
  8. Mix 2 packets of plain agar-agar powder, 1/4 tsp salt, and 200 g granulated sugar in a pot until evenly combined.
  9. Add 1 tsp vanilla, 1 liter coconut milk, and the corn juice, stir until evenly combined, and add a little yellow food coloring if the color is too pale.
  10. Cook over medium heat, stirring constantly, until it boils so the coconut milk does not split, then turn off the heat.
  11. Prick the surface of the set moss pudding so the two layers bond to each other.
  12. Pour the corn pudding slowly and evenly over the moss pudding, never into a single spot.
  13. Leave until the pudding sets and firms up, then chill it in the refrigerator for at least 4 hours.
  14. Loosen the edges of the pudding from the pan, turn it out, then slice as you like.
