Ingredients

Steps

  1. Put 450 gr of palm sugar into a pot, then add 1800 ml of water, 1 pandan leaf, and 1/4 tsp salt.
  2. Turn on medium heat and cook until the palm sugar dissolves; it does not need to boil, stirring occasionally so the bottom does not scorch.
  3. Once the palm sugar has dissolved, turn off the heat.
  4. Prepare another pot and add 3 packets of white agar-agar powder.
  5. Add 200 ml of instant coconut milk.
  6. Add 3 eggs that have been lightly beaten.
  7. Add 120 ml of sweetened condensed milk.
  8. Add 1 tsp of vanilla, or 1/2 tsp of vanilla powder if using the powdered kind.
  9. Stir until evenly combined so the batter is smooth and free of lumps.
  10. Pour in the palm sugar syrup through a strainer so it is separated from its dregs.
  11. Stir again until evenly combined.
  12. Turn on medium heat and cook until it boils without stirring so the moss pattern forms.
  13. Keep cooking a little longer until more of the moss pattern appears.
  14. Once there is plenty of moss, turn off the heat and stir so the moss sets tightly, or leave it unstirred if you want the moss loose and large.
  15. Once the mixture is just warm, pour it into a 24 cm diameter mould.
  16. Let it sit until set, then chill it in the fridge for about three hours.
  17. Turn the pudding out of the mould, slice it, and it is ready to serve.
