Pandan Moss Pudding with Butter Layer

Open offline saves

Ingredients

Butter Layer Ingredients:

Steps

  1. For the pandan juice, snip 10 pandan leaves into small pieces, blend them with 500 ml water, then strain.
  2. Mix 2 packets of plain agar-agar powder and 250 g granulated sugar in a pot, stirring them together first so the agar-agar does not clump when the liquid goes in.
  3. Add 200 ml instant coconut milk, 700 ml water, the pandan juice, a pinch of salt, 80 ml sweetened condensed milk, 1 tsp vanilla, and 2 lightly beaten eggs, then stir until evenly combined.
  4. Cook over medium-low heat until it boils, stirring the bottom of the pot occasionally so it does not scorch; the more you stir, the finer and denser the mossy strands.
  5. Once it boils, turn off the heat and let it stand briefly until the steam dies down.
  6. Pour the mixture into a 24 cm round mold and leave it until the surface forms a skin and it is half set.
  7. For the butter layer, stir 85 g melted butter with 1 egg yolk until evenly combined, then set aside.
  8. Mix 1 packet of plain agar-agar powder and 100 g granulated sugar in a pot until evenly combined.
  9. Add 700 ml liquid milk and 1/2 tsp vanilla, then keep stirring until evenly combined.
  10. Cook over medium heat, stirring constantly, until it boils so the bottom does not scorch.
  11. Add the butter and egg mixture, keep cooking until it comes back to a boil while stirring constantly, then turn off the heat.
  12. Once the surface of the pandan pudding has formed a firm skin, pour the butter pudding over it while hot, slowly and spread out, so the layer beneath does not sink.
  13. Leave until the pudding sets and firms up, then chill it in the refrigerator about 2 hours before serving.
  14. Turn the pudding out of the mold and serve.
