Palm Sugar Moss Pudding with Butter Layer

Open offline saves

Ingredients

Butter Layer:

Steps

  1. Prepare a pot and add 300 g palm sugar chopped small, 1 pandan leaf, a pinch of salt and 400 ml water.
  2. Cook over medium heat, stirring occasionally, until it boils and the sugar dissolves, then turn off the heat and set it aside.
  3. Prepare another pot and add 2 packets of white agar-agar powder, 80 ml sweetened condensed milk, 2 sachets of instant coconut milk of 65 ml each, half a teaspoon of vanilla, 2 eggs and 800 ml water, then stir until evenly combined.
  4. Strain the still-hot palm sugar liquid into the mixture, then stir until evenly combined.
  5. Cook over medium heat, stirring from the bottom occasionally, until it boils and plenty of the moss-like strands appear.
  6. While still hot, pour the mixture into a mould without stirring again so the strands rise to the top.
  7. Leave it until the surface sets and forms a skin.
  8. Take 75 g melted margarine, add 1 egg yolk, then stir until evenly combined and set aside.
  9. Prepare a pot and add 1 packet of white agar-agar powder, 100 g granulated sugar, 700 ml liquid milk and half a teaspoon of vanilla, then stir until evenly combined.
  10. Cook over medium heat, stirring occasionally, until it starts to boil.
  11. Add the egg and margarine mixture while stirring continuously, then cook until it boils again and turn off the heat.
  12. Make sure the palm sugar layer is firm enough to be poured over, then pour the butter pudding on slowly and spread out, so the layer below does not sink.
  13. If the first layer has already hardened, prick the surface with a fork so the layers bond together.
  14. Leave the pudding until cold and set without shaking it, then chill it in the fridge for about 4 hours.
  15. Turn the pudding out of the mould, then slice and serve.
