Open offline saves

Ingredients

Clear Pudding:

Moss Pudding:

Vanilla Custard:

Steps

  1. Prepare a pot and add 4 tbsp of granulated sugar, a pinch of salt, and 1 packet of coconut-flavoured nutrijel, then stir until evenly combined so it will not clump when the liquid goes in.
  2. Add 600 ml of coconut milk then keep stirring until evenly combined.
  3. Cook until it boils over medium heat, stirring occasionally so the bottom does not scorch.
  4. Once it boils, turn off the heat, pour the pudding into a container, and let it set firm.
  5. For the clear pudding, prepare a pot and add 1 packet of white agar-agar powder and 100 gr of granulated sugar, then stir until evenly combined.
  6. Add 600 ml of water then stir until evenly combined.
  7. Cook until it boils over medium heat, stirring occasionally, then turn off the heat and let it cool briefly.
  8. Once the coconut pudding has set, shred it.
  9. Pour the cooled clear pudding over the shredded coconut pudding then stir until evenly combined.
  10. Pour the mixture into the mould slowly so the shredded coconut pudding is evenly spread.
  11. Leave it to set, or put it in the fridge if you prefer.
  12. For the moss pudding, prepare a pot and add 2 packets of white agar-agar powder, 1/2 tsp of salt, and 250 gr of granulated sugar, then stir until evenly combined.
  13. Add 1,400 ml of medium-thick coconut milk, 1 tsp of vanilla, and 2 tsp of pandan paste, then stir until evenly combined.
  14. If the colour is not green enough, add a little green food colouring.
  15. Lightly beat 4 eggs then pour them into the mixture through a strainer to make sure there are no lumps of egg.
  16. Stir the mixture until evenly combined.
  17. Cook over medium heat until it boils and produces plenty of moss; stir occasionally if you want small, tight moss, or leave it unstirred if you want large moss.
  18. Once the mixture has fully boiled and there is plenty of moss, turn off the heat and let it cool, stirring occasionally so it cools faster.
  19. Wet the pudding mould with water so the pudding will be easier to unmould later.
  20. Once the pudding mixture is cool, pour it into the mould, filling only half of it.
  21. Stir the mixture in the mould so the moss is evenly spread, then leave it until the pudding is half set or the surface has formed a skin.
  22. Once the coconut pudding has set, turn it out of its mould.
  23. Lay the coconut pudding gently on top of the moss pudding so it does not sink, then pour in the rest of the moss pudding mixture.
  24. Leave the pudding to set, then chill it in the fridge for at least about three hours.
  25. For the custard, prepare a pot and add 75 gr of granulated sugar, 2 tbsp of cornstarch, and 500 ml of liquid milk, then stir until evenly combined.
  26. Add 1 tsp of vanilla then keep stirring until evenly combined.
  27. Cook over medium heat until it boils and thickens, stirring occasionally, then turn off the heat, stir until the steam has gone, and let it cool.
  28. After about three hours in the fridge, when the pudding has set, turn it out of the mould.
  29. Slice the pudding and serve it with the vanilla custard.
