Open offline saves

Ingredients

Moss Pudding:

Steps

  1. Wash 500 g of peeled pumpkin, drain it, then steam until soft.
  2. After about 15 minutes of steaming, poke the pumpkin to test it, then take it out of the steamer.
  3. Put the pumpkin into a chopper or blender, add 200 ml instant coconut milk, then blend until smooth and evenly combined.
  4. Prepare a pot, add 1 packet plain white agar-agar powder, 150 g granulated sugar, and a pinch of salt, stir until evenly combined.
  5. Add 500 ml water, then stir until evenly combined.
  6. Add the blended pumpkin, then stir until evenly combined.
  7. Cook over medium heat until boiling while stirring constantly so the bottom does not scorch or clump.
  8. Once boiling, turn off the stove.
  9. Wet the mould with water, then pour the mixture into the mould.
  10. Let it stand until the pudding forms a skin or sets.
  11. Prepare a pot, add 1 packet plain white agar-agar powder, 100 g granulated sugar, and a pinch of salt, stir until evenly combined.
  12. Add 650 ml coconut milk, 100 ml pandan juice, 1/2 tsp vanilla, and 1 lightly beaten egg, then stir until evenly combined.
  13. Turn the heat to medium and cook until it boils and forms the moss threads without stirring, just stir the base occasionally so it does not scorch.
  14. Once plenty of moss threads have formed and the mixture is properly boiling, turn off the stove.
  15. Pour the hot mixture into the mould slowly and spread out so the previous layer does not collapse.
  16. Let the pudding set and firm up, then chill it in the fridge for at least about 4 hours.
  17. Loosen the edges of the pudding and press gently, then turn the pudding out of the mould.
  18. Slice the pudding and serve.
