Open offline saves

Ingredients

Palm Sugar Sauce:

Steps

  1. Put 2 packets of white agar-agar powder, 4 tablespoons of granulated sugar, and half a teaspoon of salt into a pot, then stir until evenly combined.
  2. Pour in part of the 1400 ml of coconut milk, then stir until evenly combined and make sure no agar-agar powder is clumping.
  3. Add the rest of the coconut milk and 1 pandan leaf.
  4. Cook over medium-low heat, stirring constantly so the coconut milk does not split, until it boils and bubbles up, then turn off the heat.
  5. Stir 600 g of cendol into the boiled coconut milk, then mix until evenly combined.
  6. Pour the mixture into moulds or cups, without filling them too full.
  7. Once cool, chill them in the fridge for about two hours.
  8. Put 300 g of palm sugar chopped small, a quarter teaspoon of salt, 150 ml of water, and 2 pandan leaves into a pot.
  9. Cook over medium-low heat, stirring now and then, until the palm sugar dissolves, boils, and thickens slightly, then turn off the heat.
  10. Strain the palm sugar syrup to remove the residue, leave it to cool, then chill it in the fridge.
  11. Serve the set, chilled cendol pudding with the palm sugar sauce poured over the top.
