Steps

  1. Cut 10 washed pandan leaves into small pieces, combine them with 800 ml water, then blend until fine.
  2. Strain the pandan juice and set it aside.
  3. Prepare a bowl and add 50 g rice flour, 60 g sago starch, 40 g mung bean starch and 1 tsp salt.
  4. Pour in part of the pandan juice, then stir until the batter is smooth and lump-free.
  5. Add the rest of the pandan juice and stir again until evenly combined, adding a little green food colouring if the colour is too pale.
  6. Strain the batter to make sure there are no lumps.
  7. Pour the batter into a pan and cook over medium heat, stirring constantly, until it thickens and becomes firm.
  8. Prepare a bowl of water with plenty of ice cubes.
  9. Put some of the mixture into a cendol press and push it through so the strands drop into the iced water.
  10. Instead of a press you can put the mixture into a piping bag with the tip snipped off and pipe it into the iced water.
  11. Repeat until all the mixture has been shaped, then set it aside.
  12. Prepare a pot and add 1 pandan leaf, 200 g palm sugar and 250 ml water, then cook over medium heat, stirring occasionally, until it boils and the sugar dissolves.
  13. Cook a little longer until the syrup thickens slightly, then turn off the heat and strain the syrup.
  14. Prepare a pot and add 1 pandan leaf, a quarter teaspoon of salt and 300 ml coconut milk, then stir until evenly combined.
  15. Cook over low heat, stirring constantly, until the coconut milk boils so it does not split, then turn off the heat and let it cool to warm.
  16. Fill a glass with ice cubes, then pour in as much palm sugar syrup as you like.
  17. Add the cendol, drained from its water, then pour the coconut milk over the top.
  18. Add some diced jackfruit, then stir before serving.
