CARA MEMBUAT CENDOL || ANTI GAGAL !!

Steps

  1. For the coconut sauce, pour 300 ml instant coconut milk, 200 ml water and 1/3 tsp salt into a pot and cook over low heat, stirring, until it boils.
  2. Transfer the boiled coconut sauce to another container and set aside until it reaches room temperature.
  3. In the same pot, cook 200 g palm sugar, 50 g granulated sugar, 2 pandan leaves and 100 ml water until the sugar dissolves.
  4. Take the palm sugar syrup off the heat and strain it into another container so no impurities remain, then set aside.
  5. Cut 100 g pandan leaves, optionally mixed with a little suji leaf, into small pieces so they blend easily.
  6. Blend the leaves with 750 ml water until smooth, adding the leaves in batches until all are used.
  7. Strain the pandan juice and measure out 650 ml; if it is short, top it up with a little water until it reaches 650 ml.
  8. Prepare a container of ice cubes and plenty of cold drinking water for shaping the cendol later.
  9. In a wide bowl, mix 70 g rice flour, 30 g hunkwe flour, 1.5 tbsp sugar, 1/3 tsp salt and 1 pack of plain jelly powder.
  10. Pour in the pandan juice gradually while whisking until evenly mixed, then pour in the rest.
  11. Strain the batter straight into a non stick pan, then stir again until evenly combined.
  12. Cook over medium heat, stirring constantly, until lumps start clinging to the spatula, then lower the heat.
  13. Keep stirring over low heat until the batter is really thick and bubbling.
  14. Once it bubbles, keep stirring for about 2 minutes over low heat to remove the grassy pandan smell and make the cendol firmer.
  15. Turn off the heat.
  16. Immediately press the hot batter into the ice water using a cendol mould or a piping bag with a small snipped tip, until all the batter is used.
  17. Serve with ice cubes, add the cendol, pour over palm sugar syrup to taste, then add the coconut sauce.
