Ingredients

Cendol pudding ingredients:

Palm sugar pudding ingredients:

Coconut pudding ingredients:

Steps

  1. For the cendol layer, put 1 sachet of white agar powder, 125 g granulated sugar, and a pinch of salt into a pot, then stir first until combined.
  2. Add 700 ml of medium-thick coconut milk, stir well, then cook over medium heat, stirring constantly, until it boils so the coconut milk does not split.
  3. Wet a 24 cm mould with water, then put in 350 g of cendol and 200 g of jackfruit cut into small pieces.
  4. Pour the mixture into the mould slowly and spread out so the cendol and jackfruit do not all float up.
  5. Leave it until the pudding sets and the surface is firm enough to take the next layer.
  6. For the palm sugar layer, put 1 sachet of white agar powder, a pinch of salt, and part of the 700 ml of coconut milk into a pot, then stir until combined.
  7. Add 150 g of palm sugar chopped small and the rest of the coconut milk, then cook over medium heat, stirring constantly, until it boils and the sugar dissolves.
  8. Strain the mixture to separate out the residue.
  9. Pour the palm sugar mixture over the cendol layer while still hot, slowly and spread out; if the cendol layer has already hardened, prick the surface with a fork first.
  10. Leave it until the surface forms a skin.
  11. For the pandan coconut layer, put 1 sachet of white agar powder, 125 g granulated sugar, and a pinch of salt into a pot, then stir until combined.
  12. Add 700 ml coconut milk and half a teaspoon of pandan paste, stir well, then cook over medium heat, stirring constantly, until it boils.
  13. Pour the pandan mixture over the previous layer slowly and spread out.
  14. Leave it until the pudding sets, then chill it in the fridge for at least about 4 hours.
  15. Press gently around the edges of the mould, turn the pudding out, then slice and serve.
