Avocado and Chocolate Layered Pudding

  1. Put the liquid milk, granulated sugar, salt, vanilla, sifted cocoa powder and a packet of agar agar into a saucepan.
  2. Stir until fully combined before turning on the heat, so the agar agar does not clump.
  3. Turn on the heat and cook until it warms up, then add the dark chocolate.
  4. Keep cooking and stirring until it boils and the chocolate has dissolved, then take it off the heat.
  5. Let it stand for about 10 minutes until the steam dies down but the pudding is still warm.
  6. Strain the chocolate pudding and pour it into a 20 cm pudding mould.
  7. Take a few spoonfuls of the chocolate pudding and splatter it into a larger 24 cm mould to make a pattern.
  8. Leave both moulds at room temperature to set.
  9. Weigh the flesh of the ripe avocado, without the skin or stone.
  10. Blend the avocado with a little liquid milk until smooth.
  11. Add two drops of green food colouring for a brighter colour. This step is optional.
  12. Transfer the avocado puree into a larger bowl, since hot milk is going in next.
  13. In a saucepan, combine the remaining liquid milk with the agar agar, granulated sugar, vanilla and salt and stir until even.
  14. Cook until it boils, then turn off the heat. The avocado must never be cooked or it turns bitter.
  15. Pour the hot milk mixture over the avocado puree and stir until combined.
  16. Turn the set chocolate pudding out of its mould.
  17. Pour half of the avocado mixture slowly into the patterned mould so the splatter design is not disturbed.
  18. Set the chocolate pudding in the middle.
  19. Pour in the rest of the avocado pudding while it is still lukewarm so it bonds to the chocolate layer.
  20. Chill until fully set, then invert onto a plate.
