Dried Shrimp Filled Bread, No Mixer No Knead

Steps

  1. Blend 60 g dried shrimp that has been washed, soaked in hot water and drained; chop it instead if you want a coarser texture.
  2. Blend 5 shallots, 2 cloves of garlic and 1 curly chili with a little cooking oil to make blending easier.
  3. Heat a little cooking oil then saute 100 g of chopped sweet radish until fragrant, then set it aside in a bowl.
  4. In the same wok heat a little more oil, add the spice paste and the blended dried shrimp, then stir until combined.
  5. Add half a teaspoon of tamarind paste or tamarind water.
  6. Add half a teaspoon of salt and half a teaspoon of mushroom bouillon, then stir again until it turns slightly browned.
  7. Add the sauteed sweet radish.
  8. Once it is dry and browned, add 2 tbsp sugar and stir until the sugar dissolves and the color turns dark brown.
  9. Turn off the heat, transfer the filling into a bowl, then let it cool.
  10. Prepare a bowl, combine 200 ml milk, 1 whole egg, 6 g instant yeast, 40 g sugar and 7 g salt, then stir until evenly combined.
  11. Prepare a large bowl, add 350 g bread flour, then pour in the wet mixture while stirring.
  12. Mix by hand until all the liquid is absorbed by the flour.
  13. Add 45 g melted butter then mix again until it is fully worked into the dough.
  14. Once it is combined and no longer sticks to your hands, cover with plastic wrap and rest for 20 minutes.
  15. After 20 minutes remove the plastic wrap then stretch and fold the dough 10 times.
  16. Cover it and rest again for 20 minutes.
  17. After 20 minutes repeat the same thing, stretching and folding the dough 10 times.
  18. Shape the dough into a ball, cover it again with plastic wrap or a clean cloth, and rest for 30 minutes.
  19. Once the dough has doubled, remove the plastic wrap then knock it back by patting it to release the air bubbles.
  20. Move the dough onto a silicone mat then divide it into 50 to 55 g pieces.
  21. Roll all the pieces into balls.
  22. Cover them again with plastic wrap or a clean cloth and rest for 15 minutes.
  23. Take one piece, roll it out thin, add the dried shrimp filling, then seal it by pinching the edges together.
  24. Arrange the buns on a tray greased with margarine, leaving space between them, and repeat until all the dough is used.
  25. Cover with a clean cloth and rest again until doubled in size.
  26. Preheat the oven 10 minutes beforehand to 180 degrees Celsius with bottom heat.
  27. Brush the surface of the buns evenly with milk.
  28. Bake at 180 degrees Celsius with bottom heat on the lower rack for 10 minutes.
  29. After 10 minutes switch to top and bottom heat then bake again until the surface is browned.
  30. While the buns are still hot, brush them straight away with butter.
