Steps

  1. Put 1 tsp instant yeast, 1 tsp granulated sugar, and 115 ml warm water into a glass, then stir until evenly combined.
  2. Cover the glass and leave it for about 5 minutes until the yeast rises and foams.
  3. Put 250 g high-protein wheat flour, 20 g milk powder, 30 g powdered sugar, and 2 egg yolks into a bowl.
  4. Add the activated yeast mixture, then stir until evenly combined.
  5. Carry on kneading by hand until half-smooth, adding water a tablespoon at a time if the dough is still too dry.
  6. Add 30 g margarine and 1/4 tsp salt, then knead for about 3 minutes until the margarine is worked through; it does not need to reach the windowpane stage.
  7. Round the dough, put it in a bowl, cover with plastic wrap, then leave it 60 minutes until doubled in size.
  8. Remove the wrap and deflate the dough.
  9. Divide the dough into 11 pieces of about 43 g each, then round them.
  10. Take one piece and roll it out with a rolling pin, keeping the waiting dough covered with a clean cloth.
  11. Place a sausage at one end of the dough, then roll it up, pressing as you go so it does not come loose.
  12. Roll it back and forth under your palm so it becomes firmer, then pinch the ends so they seal.
  13. Place the rolls on a tray dusted with flour, and repeat until all the dough has been filled.
  14. Cover with a clean cloth and rest for 10 minutes.
  15. Beat 2 eggs for the coating and have breadcrumbs ready.
  16. Take one roll, dip it into the egg, then coat it in breadcrumbs.
  17. Heat oil in a wok over medium-low heat so the bread does not burn and cooks through evenly.
  18. Add the rolls and fry until golden.
  19. Once the underside is golden, turn them so they cook evenly.
  20. Lift the rolls out of the oil, drain them, then fry the rest of the batch.
