Steps

  1. Heat oil in a wok, add 1 onion that has been chopped and 4 cloves of crushed garlic, then saute until fragrant.
  2. Add 500 g chicken that has been cut into small pieces, keep cooking until the chicken changes colour.
  3. Add 200 g potatoes cut into small cubes, 200 g carrots cut into small cubes, 100 ml water, 1 tsp powdered broth, 1 tsp granulated sugar, 1 tsp ground pepper, 1 tsp salt, 1 tsp chilli powder, and 3 tsp curry powder.
  4. Stir until evenly combined, then keep cooking until the liquid has reduced and the carrots are soft.
  5. Adjust the seasoning, turn off the stove, then leave the filling to cool.
  6. In a bowl put 500 g high protein wheat flour, 30 g milk powder, 75 g granulated sugar, 2 tsp instant yeast, 4 egg yolks, and 225 ml cold liquid milk.
  7. Mix the dough at medium speed for about 15 to 20 minutes until it is smooth and elastic, you can also knead it by hand.
  8. Once the dough is evenly combined, add 1 tsp salt and 75 g margarine, then keep mixing until the dough is smooth and elastic.
  9. After about 20 minutes of mixing, take a little dough and stretch it out to check that it is smooth and elastic.
  10. Round the dough.
  11. Divide the dough into equal portions of about 40 g each, then round each piece until it is smooth.
  12. Line up the rounded pieces in order, cover the dough with plastic, then rest it for about 30 minutes.
  13. After 30 minutes of resting, take one piece, roll it out to a medium thickness, then place some filling in the middle.
  14. Wrap up the filling and press the seam firmly so it does not open while frying.
  15. Place the filled dough on a non stick mat or a surface dusted with wheat flour.
  16. Dip the dough in egg white, then coat it in breadcrumbs.
  17. Rest the dough for about 20 minutes or until it has puffed up slightly.
  18. Heat the oil over low heat, then add a batch of dough to the oil.
  19. Fry over low heat until golden brown, turning the buns so they cook evenly.
  20. Once they are golden brown, lift out and drain the buns, then continue frying the rest of the dough.
