Steps

  1. Bring water to the boil in a pot, then add 500 g chicken breast that has been washed clean.
  2. Boil the chicken for about 10 minutes over medium heat until tender, then check it with a skewer.
  3. Lift the chicken out and drain it, let it cool, then shred it.
  4. Set the heat to medium, then melt 3 tbsp margarine in a wok.
  5. Add 1 onion cut into small pieces, 4 grated cloves of garlic, and 4 grated shallots, then fry until fragrant.
  6. Add 3 carrots cut into small cubes and the shredded chicken.
  7. Add 2 tbsp oyster sauce, 4 tbsp sweet soy sauce, 1/2 tsp salt, 1/2 tsp ground pepper, 1 tsp granulated sugar, and 1/2 tsp stock powder, then stir until evenly combined.
  8. Add 70 ml water, then cook until the liquid reduces and the carrots soften, stirring now and then.
  9. Add 2 tbsp wheat flour dissolved in 50 ml water, then carry on cooking until the flour slurry is absorbed.
  10. Turn off the heat and let the filling cool.
  11. Put 1 tsp instant yeast and 1 tsp granulated sugar into 120 ml warm water, stir until even, then cover and leave for about 3 minutes until it foams.
  12. Put 270 g high-protein wheat flour, 2 tbsp milk powder, 2 tbsp powdered sugar, and 2 egg yolks into a bowl.
  13. Add the activated yeast mixture, then stir and carry on kneading by hand until evenly combined.
  14. Add 2 tbsp margarine and 1/4 tsp salt, then knead until the margarine is worked right through the dough.
  15. Round the dough, return it to the bowl, cover with plastic wrap, then rest it 40 to 60 minutes until doubled in size.
  16. Deflate the dough to break the air bubbles, then round it again.
  17. Divide the dough into 10 equal pieces of about 49 g each.
  18. Press each piece to release the air bubbles, then round it until smooth and line them up in order.
  19. Roll out a piece with a rolling pin, then place some filling in the middle.
  20. Fold the dough over, bring the two sides together, and seal them tightly so it does not burst while frying.
  21. Press the edge flat, then crimp it by pinching and folding it upward, the way you would a pastel.
  22. Repeat until all the dough has been shaped.
  23. Heat oil in a wok over medium-low heat, then add the panada a few at a time.
  24. Fry until both sides are golden brown, turning them so they cook evenly, then lift them out and drain.
