Steps

  1. In a pot put in enough water, 750 g chicken breast, 3 bay leaves, and 3 bruised lemongrass stalks, then boil over medium heat for about 15 minutes until the chicken is cooked.
  2. After about 15 minutes of boiling, poke the chicken to check it, then lift it out and drain.
  3. Shred the chicken using a mixer, chopper, fork, or your hands, then set it aside.
  4. Grind 150 g red chillies, 100 g shallots, 50 g garlic, and 30 g red bird's eye chillies in a blender, adding a little cooking oil so it grinds more easily.
  5. In a pan put the ground spice paste, 3 bruised lemongrass stalks, 3 kaffir lime leaves, and 3 bay leaves.
  6. Saute over medium heat while stirring constantly until the paste is fragrant and the oil starts to separate out.
  7. Add the shredded chicken, 1 1/2 tsp salt, 1 tsp powdered broth, 3 tsp granulated sugar, and 150 ml water, then stir until evenly combined.
  8. Keep cooking until the seasoning is absorbed and the liquid has reduced.
  9. Adjust the seasoning, turn off the stove, then set the filling aside.
  10. In a bowl put 500 g tapioca starch, 150 g wheat flour, 1 tbsp salt, 1 tbsp powdered broth, and 7 cloves of crushed garlic, then stir until evenly combined.
  11. In a pot bring about 500 ml of water to the boil.
  12. Once the water is boiling, pour it straight into the flour mixture, then stir with a spatula until evenly combined.
  13. Once the dough is warm enough to handle, knead it, adding tapioca starch a little at a time if the dough is too soft.
  14. Dust the work surface with flour so the dough does not stick, then roll the dough out to a medium thickness.
  15. Cut the dough using a pastel dumpling press.
  16. Put about 1 tbsp of filling in the middle of the dough, then close the press without squeezing too hard.
  17. Coat the pieces in rice flour so they do not stick and so the cireng turns out crispy.
  18. Heat enough cooking oil over medium heat, not too hot, then add a batch of cireng to the oil.
  19. Fry over medium heat until golden, turning them so they cook evenly.
  20. Once they start to turn golden, lift them out and drain off the oil.
  21. Serve the cireng, or fry them again over high heat until golden brown if you want them crispy.
  22. After a short second fry, once they are golden brown, lift them out and drain the cireng.
