Steps

  1. Boil 750 g chicken breast in enough water with 2 bruised lemongrass stalks and 3 bay leaves over medium heat for about 10 to 15 minutes until the meat is tender, then lift out and drain it.
  2. Shred the chicken with a chopper, a mixer, or a fork, keeping it from getting too fine.
  3. Grind 150 g red chilies, 30 g bird's eye chilies, 50 g garlic, and 100 g shallots in a blender with a little cooking oil.
  4. Fry the spice paste with 3 kaffir lime leaves, 3 bruised lemongrass stalks, and 3 bay leaves over medium heat, stirring constantly, until cooked, fragrant, and the oil separates out.
  5. Add the shredded chicken, 1/2 tsp bouillon powder, 1 tsp salt, 3 tsp granulated sugar, and 150 ml water, stir well, then cook until the liquid reduces and is absorbed, and adjust the seasoning.
  6. For the wrappers, mix 750 g medium-protein flour, 75 g tapioca starch, 1 tsp bouillon powder, 1 tsp salt, and 2 eggs, pour in part of the 1400 ml water, then stir until the batter is smooth, silky, and lump free.
  7. Add 6 tbsp cooking oil and keep stirring until evenly combined.
  8. Heat the risole crepe pan over low heat, dip the pan into the batter, then cook until the surface is dry and the edges start to lift away from the pan.
  9. Peel the wrapper off the pan and stack the wrappers so they stay moist, then repeat until all the wrappers are cooked, stirring the batter occasionally.
  10. Take one wrapper, add a little over 1 tablespoon of the shredded chicken, then fold and roll it up tightly, and repeat until all the filling is wrapped.
  11. Dip the risoles into the leftover batter, let the excess drip off, then coat them in breadcrumbs.
  12. Heat enough oil in a pot, add a batch of risoles, then fry over medium heat, turning them, until golden brown.
  13. Lift out and drain the risoles, then serve.
