For coating:

Steps

  1. Heat 2 tbsp margarine in a pan over medium heat.
  2. Once the margarine is hot, add 3 finely chopped cloves of garlic and 1 finely chopped onion, then fry until fragrant.
  3. Add 250 g minced chicken, half a teaspoon of powdered stock, a quarter teaspoon of ground pepper, 2 tsp granulated sugar and half a teaspoon of salt, then cook until the meat changes colour.
  4. Add 100 ml coconut milk and 250 g carrot cut into small cubes, then cook until the carrot is tender and the liquid has reduced.
  5. Add a quarter teaspoon of ground nutmeg, then stir until evenly combined.
  6. Add 2 stalks of celery and 2 stalks of spring onion, both finely sliced, then stir until evenly combined.
  7. Dissolve 1 tbsp wheat flour in 5 tbsp water, then pour it into the pan.
  8. Cook, stirring constantly, until the filling thickens, then turn off the heat and set it aside.
  9. Peel 1 kg potatoes, wash them, cut them into small pieces, then steam for about 25 minutes until soft.
  10. Test the potatoes with a skewer; once soft, take them out of the steamer, mash them while still hot and set aside.
  11. Turn on medium heat, put 250 ml liquid milk and 75 g margarine into a pan, then cook until it boils and the margarine melts.
  12. Add half a teaspoon of ground pepper, 1 tsp salt, a quarter teaspoon of ground nutmeg and half a teaspoon of powdered stock, then stir until evenly combined.
  13. Add 200 g wheat flour, then stir quickly until the flour is cooked and comes away cleanly, then turn off the heat.
  14. Add the flour mixture to the mashed potato, then stir until evenly combined.
  15. Take about 50 g of the mixture, flatten it on an oiled palm, place filling in the centre, seal it tightly, then roll it into an oval.
  16. Repeat the same way until all the mixture is shaped and filled.
  17. Dip the croquettes in egg white, then roll them in breadcrumbs until fully coated.
  18. Keep the croquettes in the freezer for about an hour so they hold together better when fried.
  19. Turn on medium heat, heat oil in a pan, then fry the croquettes a few at a time, turning them so they cook evenly.
  20. Once they are golden, lift the croquettes out and drain off the oil.
