Ingredients

Filling Ingredients:

Steps

  1. Heat 2 tbsp margarine in a pot, then saute 1 onion cut into small dice and 3 grated garlic cloves until fragrant.
  2. Add 250 g minced chicken.
  3. Add 2 tsp granulated sugar, 1/2 tsp salt, 1/2 tsp ground pepper, 1/2 tsp stock powder and 1/4 tsp ground nutmeg, then cook until the chicken changes colour.
  4. Add 100 ml coconut milk and 250 g carrot cut into small dice, then cook until the carrot is soft and the liquid has reduced, and check the seasoning.
  5. Add 2 finely sliced spring onions and 2 finely sliced celery stalks, then stir until evenly combined.
  6. Dissolve 1 tbsp all-purpose flour in 5 tbsp water, pour it into the pot, then cook until the flour mixture is absorbed and evenly combined.
  7. Turn off the heat and set the filling aside.
  8. Cut up 1 kg of cassava, net weight, and remove the fibrous core.
  9. Steam the cassava for about 20 to 30 minutes until soft, test it with a skewer, then lift it out of the steamer.
  10. While it is still hot, mash the cassava together with 2 egg yolks, 1 tsp salt, 1/2 tsp stock powder, 1/4 tsp ground pepper and 2 tbsp margarine until smooth and evenly combined.
  11. Transfer the cassava mixture to another bowl.
  12. Take a piece of the cassava mixture and flatten it with a spatula so it does not stick to your hands.
  13. Put some filling in the centre, not too much or the cassava shell will split, then wrap it up and press it into a firm, smooth ball.
  14. Roll it gently into an oval or a round shape as you like, then repeat until all the mixture is used.
  15. Dip each croquette in egg white, then roll it in breadcrumbs, pressing gently so the crumbs stick evenly.
  16. Put the croquettes into an airtight container and freeze them; they can be fried any time and keep for up to 1 month.
  17. Heat oil in a pan, add a batch of croquettes and fry over medium heat only briefly since the cassava is already cooked.
  18. Once both sides are golden, lift the croquettes out and drain off the oil, then serve.
