Steamed Pandan Bread with Kaya Jam

  1. Mix the low protein flour with instant yeast and sugar and stir until even.
  2. Pour in the vegetable oil, then add the cold milk little by little while kneading.
  3. Knead for about 10 minutes until the dough is smooth and fully developed.
  4. Shape the dough into an oval, folding the surface so it stays smooth, then seal the seam underneath.
  5. Place the dough in a 10 by 20 by 8 cm loaf tin lined with baking paper.
  6. Cover and proof for 45 to 50 minutes until doubled in size.
  7. Cook the thick coconut milk, sugar, palm sugar, and salt over low heat until the sugar dissolves and the mixture is warm.
  8. Whisk four egg yolks with vanilla in a separate bowl.
  9. Add the pandan paste and a pandan leaf to the coconut milk, then turn off the heat.
  10. Pour half the warm coconut milk into the yolks while stirring, then return everything to the pot.
  11. Cook over the lowest heat, stirring constantly, until the jam thickens and starts to bubble.
  12. Take it off the heat, remove the pandan leaf, and blitz with a hand blender until smooth.
  13. Cover the jam with cling film touching the surface and let it cool.
  14. Steam the bread over medium low heat for 20 minutes with the steamer lid wrapped in cloth.
  15. Turn off the heat, crack the lid open slightly, and wait 3 to 4 minutes before removing the bread.
  16. Take the bread out and cool it on a rack so the bottom does not get soggy.
  17. Slice the bread and split each piece through the middle without cutting all the way.
  18. Loosen the kaya jam with a spoon and fill each slice generously.
