Ingredients

🎀Pandan Srikaya Ingredients:

Steps

  1. Cut 10 pandan leaves, put them into a blender together with 300 ml of water, then blend until smooth.
  2. Strain the pandan juice and set it aside.
  3. Wash 500 gr of glutinous rice until clean, soak it for about 4 hours, then drain.
  4. Grease a pan thinly with cooking oil, line it with baking paper or banana leaf, then add the drained glutinous rice.
  5. Mix 500 ml of medium-thick coconut milk with 2 tablespoons of cooking oil and 1 teaspoon of salt, and stir until well combined.
  6. Pour the coconut milk mixture into the pan and level out the rice.
  7. Add pieces of pandan leaf on top.
  8. Put the pan into a steamer with boiling water and steam for about 30 minutes until the rice is cooked.
  9. While it steams, put 75 gr of all-purpose flour, 15 gr of cornstarch, 100 gr of granulated sugar, 2 eggs, half a teaspoon of salt, half a teaspoon of vanilla powder, 250 ml of pandan juice, and 250 ml of medium-thick coconut milk into a pot.
  10. Stir until the batter is smooth, silky, and free of lumps.
  11. Strain the batter to make sure there are no lumps.
  12. Cook the batter over medium heat while stirring constantly until it starts to steam and the bottom thickens, then turn off the heat.
  13. Once the glutinous rice is cooked, take the pan out of the steamer and stir the rice.
  14. Compact the rice again, pressing it down and levelling the surface.
  15. Return the pan to the steamer, pour the pandan batter on top, then level it with a spoon or spatula.
  16. Continue steaming for about 45 minutes over medium heat until the cake is cooked.
  17. Take the pan out of the steamer and let the cake cool completely before turning it out of the pan.
  18. Run a knife around the edges of the cake, turn it out of the pan, then peel off the baking paper.
  19. Cut the cake using a spatula or a plastic-wrapped knife so it does not stick, then serve.
