Open offline saves

Ingredients

Sticky Rice Layer:

Pandan Custard Layer:

Steps

  1. Grease a 20 x 20 cm tin thinly with cooking oil, line it with banana leaf, then brush the banana leaf with a little oil.
  2. Mix 300 ml thick coconut milk with half a teaspoon of salt.
  3. Put 500 g glutinous rice, already washed, soaked for about three hours and drained, into the tin.
  4. Pour over the salted coconut milk and stir until the rice is evenly submerged, then add 2 pandan leaves.
  5. Put the tin into a steamer whose water is already boiling and steam for about 30 minutes over medium heat.
  6. After 15 minutes, uncover the steamer and stir the rice so it cooks evenly, then steam for another 15 minutes.
  7. After a total of 30 minutes, taste the rice, then lift the tin out of the steamer.
  8. Tip the cooked sticky rice into the tin and press it down until evenly compacted, so the custard layer does not seep into the rice.
  9. For the pandan juice, snip 7 pandan leaves into small pieces, then blitz them in a chopper with 200 ml water until fine.
  10. Strain the pandan juice and set it aside.
  11. Prepare a bowl, add 4 eggs, 185 g granulated sugar and 500 ml medium-thickness coconut milk, then stir until the sugar dissolves.
  12. Add 80 g wheat flour, 50 g cornstarch, half a teaspoon of vanilla powder and half a teaspoon of salt, then stir until evenly combined.
  13. Add the pandan juice and stir until evenly combined, adding a little pandan paste if the colour is not green enough.
  14. Strain the custard mixture to make sure there are no lumps.
  15. Cook the mixture over medium heat, stirring constantly, for about five minutes until slightly thickened; it does not need to boil, then turn off the heat.
  16. While it is still hot, pour the custard straight over the sticky rice layer, then pop any air bubbles on the surface.
  17. Put the tin into the already boiling steamer and steam for about 40 minutes over medium-low heat, with the steamer lid wrapped in a clean cloth.
  18. After about 40 minutes, test the cake with a skewer; if no batter clings to it, lift the tin out of the steamer.
  19. Let the cake cool for at least about four hours, then run a knife around the edges and turn it out of the tin.
  20. Cut the cake with a knife wrapped in plastic so the slices are neat and the cake does not stick to the blade.
