  1. Make the sauce by mixing 2 tbsp oyster sauce, 2 tbsp dark soy sauce and 2 tbsp fish sauce.
  2. Add 1 tbsp water, half a teaspoon of mushroom bouillon and one and a half tablespoons of sugar.
  3. Squeeze in half a calamansi lime and discard the seeds, then stir until the sugar dissolves and set it aside.
  4. Halve 8 shallots.
  5. Slice 2 large red chilies, cut 2 long beans into small pieces and prepare 2 cm of ginger.
  6. Roughly chop 2 large red chilies and 6 cloves of garlic, then pound them in a mortar without making them too fine.
  7. Heat a wok with enough vegetable oil and fry the pounded paste until fragrant.
  8. Add the sliced shallots and wait about 10 seconds.
  9. Add 300 g of minced pork and stir-fry until it turns pale.
  10. Add the long beans.
  11. Pour in the sauce you made earlier and stir until everything is coated.
  12. Add half a teaspoon of pepper, then stir-fry until the sauce reduces and caramelizes.
  13. Add a full handful of Thai basil or lemon basil leaves, toss through, then turn off the heat.
  14. Fry an egg until the underside is golden and crisp.
  15. Serve the pork over a bowl of rice with the fried egg on top.
