  1. Bring 800 ml of water to a boil, then add 500 g of pork belly to the pot.
  2. Add 2 smashed cloves of garlic, 5 slices of ginger, 50 ml of cooking rice wine, and 1/2 tsp pepper, then stir.
  3. Cover the pot and cook for 1 hour over low heat until the pork belly is tender.
  4. Lift out the pork belly, then strain and keep the broth for the next step.
  5. Thinly slice the boiled pork belly.
  6. Heat a wok, then fry the sliced meat until lightly golden.
  7. Lift out the meat and set it aside, keeping the oil in the pan.
  8. For the sauce, mix 4 tbsp light soy sauce, 3 tbsp lard, 1 tbsp honey, 1.5 tbsp cooking rice wine, 1 tsp sugar, and 1 tsp finely chopped ginger.
  9. Add 1 tbsp rice vinegar, 1 tbsp sesame oil, 1/2 tsp mushroom bouillon, 1/2 tsp white pepper, and 4 sliced dried red chillies.
  10. Stir the sauce until the sugar dissolves.
  11. Reheat the same wok, return the meat, then pour in the sauce.
  12. Cook until the sauce is absorbed by the meat and the colour darkens.
  13. Pour in 80 ml of the reserved pork broth, then cook until it is dark and the sauce turns sticky.
