Steps

Steps were generated from the video narration. Watch the video if unsure.

  1. Cut 500 g of pork shoulder into small pieces so it is easy to grind.
  2. Grind the meat until it is really fine with no coarse bits left.
  3. Grind it in two batches if your grinder is not very large, and add half an onion and 4 cloves of garlic as well.
  4. Make sure everything is finely ground until the texture turns slightly sticky.
  5. Add 100 g of pork fat that has also been ground.
  6. Add 2 egg whites, and just set the yolks aside.
  7. Add 1 tsp salt, 1 tsp mushroom or chicken stock powder, 1/2 tsp pepper, and 2 tsp sugar.
  8. Add 2 tsp sesame oil and 1 tsp oyster sauce.
  9. Add 2 tsp red yeast rice powder so the colour turns slightly red rather than too pale.
  10. Add 5 tbsp tapioca starch.
  11. Mix everything until really well combined while pressing it down so the texture becomes springy and dense.
  12. Prepare a rectangular loaf tin about 17 by 8 cm, then line it with baking paper or grease it with vegetable oil so nothing sticks.
  13. Put the mixture in and press it all the way to the bottom of the tin with the back of a spoon or your hand so there are no air pockets.
  14. Tap the tin down lightly so the mixture fills every part of the tin.
  15. Cover the tin with aluminium foil.
  16. Bring water to a boil in a steamer, put the tin in, then steam for about 1 hour over medium heat.
  17. Let it cool down after it is cooked.
  18. Turn it out of the tin.
  19. Slice it however you like.
  20. Heat a little oil, then pan fry the slices with beaten egg until golden brown, then serve.
