Steamed Bogor Taro Layer Cake

  1. Line a loaf tin with paper.
  2. Crack 3 eggs into the mixer bowl.
  3. Add 5 g of cake emulsifier.
  4. Add 1/2 tsp of vanilla extract and 2 pinches of salt.
  5. Add 145 g of sugar.
  6. Beat until the batter is thick and holds a ribbon.
  7. Sift 75 g of all-purpose flour into the batter.
  8. Sift in 25 g of cornstarch.
  9. Sift in 1/2 tsp of baking powder.
  10. Mix briefly on the lowest speed just until combined.
  11. In a separate bowl combine 70 g of coconut milk with 1 tbsp of oil.
  12. Take a quarter of the batter and stir it into the coconut milk to match the textures.
  13. Pour it back into the main batter and fold until combined.
  14. Weigh the batter and divide it into two.
  15. Add 1 tsp of taro paste to one half.
  16. Add yellow food colouring to the other half.
  17. Fold gently until the colour is even, without knocking the air out.
  18. Pour the taro batter into the tin and tap it so there are no air pockets.
  19. Set the tin in the hot steamer with the lid wrapped in a cloth.
  20. Steam over medium-low heat for 10 minutes.
  21. Open it, pour the yellow batter on top, and steam for another 20 minutes until cooked.
  22. Take the finished cake out.
  23. Turn it out of the tin and let it cool completely.
  24. Flip the cake so the yellow layer is on the bottom and the purple on top.
  25. Spread a thin layer of buttercream on top so the cheese will stick.
  26. Cover the top generously with grated cheese.
