Ingredients

Steps

  1. Set out a bowl and add 6 eggs, 125 gr granulated sugar, and 1 1/2 tsp emulsifier. SP, TBM, or ovalet all work.
  2. Sift 90 gr medium-protein flour, 25 gr cornstarch, and 25 gr milk powder into the bowl to make sure there are no lumps.
  3. Beat the batter on low speed first so the flour does not fly out.
  4. Once the batter starts coming together, turn the mixer up to maximum speed.
  5. Beat for about 10 minutes until the batter is voluminous, thick, and holds a ribbon, meaning the trail from the beaters no longer sinks quickly, then turn off the mixer.
  6. Add 1 tsp vanilla, 150 gr melted margarine that has cooled, and 5 drops of yellow food coloring.
  7. Fold the batter gently from the bottom up so it stays thick, and make sure no melted margarine settles at the bottom or the cake will turn dense.
  8. Divide the batter into two equal parts, since it is baked twice in separate pans.
  9. Take out a little batter, about 1 ladleful, to make the pattern, add 1 tsp cocoa powder, then stir until evenly combined.
  10. Prepare a 20 x 20 cm pan, grease it thinly with margarine, then line it with baking paper.
  11. Pour the batter into the pan, then tap the pan a few times so trapped air can escape.
  12. Pipe the pattern onto the surface of the batter.
  13. Preheat the oven for about 10 minutes, then bake at 150 degrees Celsius with top and bottom heat for about 25 minutes or until the cake is done.
  14. After about 25 minutes the surface is browned and dry. Do the skewer test; if no batter sticks to it the cake is done, so take the pan out of the oven.
  15. Continue baking the second pan.
  16. While still hot, run a knife around the edge of the pan, turn the cake out, then peel off the baking paper.
  17. Let it rest a while until the cake is cool.
  18. Once the cake is cool, spread strawberry jam over it and level it with a spoon or spatula.
  19. Cover the jam with the other cake layer, then press gently so the layers stick together.
  20. Slice the cake with a sharp knife so it does not fall apart, then serve.
