Purple Tapioca Steamed Layer Cake

  1. Pour 1400 ml of coconut milk into a wok.
  2. Add 1 teaspoon of salt plus one pandan leaf.
  3. Cook over medium heat while stirring until smooth and boiling.
  4. Once the coconut milk boils, turn off the heat and take it off the stove.
  5. Keep stirring the coconut milk until it is completely cool.
  6. Combine 350 g of rice flour, 375 g of granulated sugar, and 180 g of tapioca starch, then mix the dry ingredients until thoroughly even.
  7. Work in the cooled coconut milk a little at a time, stirring until smooth.
  8. Add all the remaining coconut milk, then keep stirring.
  9. Divide the batter into two portions, then split one of them again so there are three bowls in total.
  10. Add nine drops of purple coloring to one bowl for a dark purple shade.
  11. Add two drops of purple coloring to the next bowl for a light purple shade, then stir both until evenly colored.
  12. Dissolve 1/2 teaspoon of white coloring in a little hot water, then stir it into the last bowl until even.
  13. Set out the mini molds, then brush them with a little cooking oil.
  14. Place the molds in the preheated steamer, making sure the batter is stirred before each pour.
  15. Pour in some of the dark purple batter, then steam for 4 minutes.
  16. Pour in some of the white batter, then steam for 4 minutes.
  17. Pour in some of the light purple batter, then steam for 4 minutes, repeating the color order until the molds are full.
  18. Pour in the final layer, then steam for 25 minutes.
  19. After 25 minutes, take the molds out of the steamer.
  20. Once the cakes are warm or cool, turn them out of the molds, then slice them and serve.
