  6. Cook over medium heat, stirring, until even and boiling, then take it off the heat, stirring until warm.
  7. Combine 300 g white glutinous rice flour with 150 g steamed, mashed purple sweet potato.
  8. Pour the coconut milk mixture into the flour in stages, mixing it through.
  9. Knead by hand, work in 2 tbsp cooking oil, then keep kneading until the dough is smooth.
  10. Roll a portion into a ball, press a well in the center, fill it with the coconut filling, then seal and reshape it.
  11. Flatten each ball into a square, marking lines across the surface with a bamboo skewer.
  12. Steam in the preheated steamer for 20 minutes, lifting the lid every 3 minutes so the cakes hold their shape.
  13. For the sauce, combine 350 ml coconut milk, salt, 2 tbsp granulated sugar, and 20 g rice flour slaked with a little coconut milk.
  14. Cook while stirring until smooth, boiling, and thickened, then take it off the heat.
  15. Serve the kue bugis with the coconut sauce.
