Steps

  1. Peel the cassava and wash it clean, preparing about 1.1 kg of cassava net weight.
  2. Grate the cassava; if the cassava holds a lot of water, strain the water off first.
  3. Add 270 ml of medium-thick coconut milk, one packet of white agar-agar powder, 1 teaspoon of vanilla, 1/2 teaspoon of salt, and 250 grams of granulated sugar to the grated cassava.
  4. Stir until the batter is evenly combined.
  5. Divide the batter into three equal parts.
  6. Add about five drops of food colouring to each part of the batter, then stir until the colour is evenly mixed.
  7. Brush the mould thinly with cooking oil, then pour about one tablespoon of the first colour of batter into the mould.
  8. Level the batter with a spoon or spatula; if you do not have a mould, the batter may be steamed in a cake pan.
  9. Put the mould into a steamer whose water is already boiling, then steam for about 7 minutes over medium heat; line a flat steamer lid with a clean cloth so that condensation does not drip onto the batter.
  10. After about 7 minutes, once the first layer has set, pour about one tablespoon of the second colour of batter into the mould.
  11. Level the batter, then continue steaming for about 7 more minutes over medium heat.
  12. Pour in the last colour of batter until the mould is full, then level it.
  13. Continue steaming for about 20 minutes or until the cake is cooked through.
  14. Lift out and remove the mould from the steamer.
  15. Let the cake cool before turning it out of the mould so that it does not fall apart easily.
  16. Mix 200 grams of grated coconut, taking only the white part, with 1/2 teaspoon of salt and stir until evenly combined.
  17. Add one pandan leaf, then steam the coconut for about 5 minutes so that the grated coconut does not spoil quickly.
  18. Lift the coconut out of the steamer and let it cool.
  19. Turn the cakes out of the mould with a spatula or spoon, then roll them in the cooled grated coconut.
