Ingredients

coating ingredients:

Steps

  1. Prepare 500 g grated cassava, and if it is very wet you may strain off a little liquid, but do not let it dry out.
  2. Mix 65 ml instant coconut milk with 70 ml water to make 135 ml coconut milk, stir well, then add it to the bowl with the cassava.
  3. Add 125 g granulated sugar, a quarter teaspoon of salt, a quarter teaspoon of vanilla and 1 tbsp white agar-agar powder, then stir until evenly combined.
  4. Divide the mixture into 3 equal parts, add 4 drops of red, yellow and green colouring to each, then stir until evenly combined.
  5. Grease a 20 x 10 x 6 cm tin thinly with cooking oil and line it with banana leaf or clear plastic.
  6. Pour one portion into the tin, level it with a spoon or spatula, press it down, then tap the tin a few times so trapped air escapes.
  7. Put the tin into the already hot steamer and steam for about 10 minutes over medium heat, with the steamer lid wrapped in a clean cloth.
  8. After 10 minutes, once the layer has set, pour in the next colour, level it, then steam again for about 10 minutes.
  9. Pour in the last colour and steam for about 20 minutes until the cake is cooked through.
  10. Turn off the heat and let the cake cool in the tin, because it is still very sticky.
  11. For the coating, prepare a bowl and add 1 pandan leaf, 100 g grated coconut using only the white part and a quarter teaspoon of salt, then stir until evenly combined.
  12. Steam the grated coconut for about 10 minutes so it does not spoil quickly, then take it out and turn off the heat.
  13. Once the cake is cold, run a knife around the edges, turn the cake out of the tin and peel off the banana leaf.
  14. Cut the cake with a knife wrapped in plastic so it does not stick.
  15. Roll the cake pieces in the steamed grated coconut until evenly coated.
