Ingredients

Cassava Layer Ingredients:

Coconut Layer Ingredients:

Steps

  1. Put 300 g palm sugar, 3 tbsp granulated sugar, 1/2 tsp salt, 2 pandan leaves and 1 litre of water into a pot.
  2. Simmer over medium heat, stirring occasionally, until the sugar dissolves; it does not need to boil, then turn off the heat.
  3. Strain the palm sugar syrup, then leave it briefly until it is lukewarm.
  4. Peel 1 kg of cassava so its net weight is about 600 g, then cut it into pieces so it is easier to grind.
  5. Grind the cassava in a chopper while pouring in a little of the palm sugar syrup until it is smooth.
  6. Transfer the cassava mixture to another bowl, pour in the remaining palm sugar syrup, then stir until evenly combined.
  7. Pour the mixture into heatproof cups until three quarters full, leaving a little room for the coconut layer.
  8. Steam for about 30 minutes over medium heat in a steamer whose water is already boiling, and wrap the steamer lid in a clean cloth so condensation does not drip onto the batter.
  9. While it steams, put 60 g rice flour, 30 g tapioca starch, 1 tsp salt, 2 tbsp granulated sugar and 1300 ml medium-thick coconut milk into a pot, then stir until evenly combined.
  10. Cook the coconut layer over medium heat, stirring constantly, until it thickens; it does not need to boil because it will be steamed again.
  11. After 30 minutes of steaming, pour the coconut layer over the cassava layer to fill each cup.
  12. Steam again for about 10 minutes over low heat until cooked, then lift out and serve; this cake tastes better cold.
