Salt and Tamarind Prawns, Pontianak Style

Steps

  1. Blend all the spice paste ingredients: 5 curly red chillies, 1 large red chilli, 5 shallots, 3 garlic cloves, 3 candlenuts, turmeric, galangal, lemongrass, coriander and salt.
  2. Dissolve 1/2 tbsp tamarind paste in 2 tbsp water, then add it to the blender.
  3. Add a little more water so the paste can blend completely smooth.
  4. Add 500 g peeled prawns to the spice paste and mix until evenly coated.
  5. Chill in the fridge for about 1 hour so the spices soak in.
  6. Heat a pan, then add the marinated prawns along with all the paste.
  7. Do not add any water, the prawns will release their own liquid.
  8. Once it comes to a boil, add 1 tbsp sweet soy sauce.
  9. Keep cooking over medium heat; this stage genuinely takes a while.
  10. Once the liquid has reduced enough, add 1.5 tbsp sugar.
  11. Keep stirring until the paste is dry and clings to the prawns.
  12. Drizzle a little vegetable oil around the rim of the pan to make the spices richer and more fragrant.
  13. Once the paste has turned golden brown, add 1 pandan leaf cut into pieces.
  14. When the pandan leaf has wilted, take the pan off the heat and serve with hot rice.
