Salt and Tamarind Freshwater Prawns

Ingredients

Spice paste :

Steps

  1. Put all the spice paste ingredients in a chopper; cut hard items like lemongrass and galangal small first, and deseed the chillies for a mild version.
  2. Process until smooth; add more vegetable oil if it will not break down.
  3. Set the spice paste aside.
  4. Take 1 kg of freshwater prawns and cut the heads at an angle.
  5. Trim off the legs and clean them up so they are not in the way when eating.
  6. Do not discard the orange part in the head, that is the roe.
  7. Clean out the vein along the back by pulling it out with a toothpick.
  8. Also remove the large black sac in the head.
  9. Rinse the prawns with water until clean.
  10. Add the spice paste and mix until all the prawns are evenly coated.
  11. Cover and chill for 1 hour, or overnight for deeper flavour.
  12. Heat enough vegetable oil, but not too much.
  13. Add the prawns along with all the paste.
  14. Cook while stirring over medium low heat so the spices do not burn.
  15. Never add water at any point during cooking.
  16. Halfway through cooking, drizzle in a little more vegetable oil to make the spices more fragrant.
  17. Add 2 tbsp sugar.
  18. Cook until the paste is fairly dry and has darkened in colour.
  19. Just before taking it off, add 1 pandan leaf and cook briefly until the leaf wilts.
  20. Take it off the heat and transfer to a serving dish.
