  1. Soak the shrimp in lime juice to remove any fishy smell.
  2. Grind the seasoning: shallots (4), garlic (2), candlenuts (1), turmeric (1 knob), a little ginger, small tomato (1), curly red chilies (15), and red bird's-eye chilies (10), with added oil.
  3. Process all the seasoning until smooth.
  4. Transfer the ground seasoning to a pan.
  5. Saute (without extra oil) together with the bay leaves and lemongrass.
  6. Saute until the paste is cooked and fragrant (kaffir lime leaves and turmeric leaves can be added if you have them).
  7. Add the shrimp, and saute with the seasoning until it changes color.
  8. Add water (150 ml).
  9. Add salt, chicken bouillon powder, and sugar, and cook until the shrimp is done (not too long).
  10. Taste and adjust the seasoning if needed.
  11. Add the scallions and Thai basil, turn off the heat, stir briefly, then serve.
