SAMBAL MATAH:

Steps

Steps were generated from the video narration. Watch the video if unsure.

  1. Clean the prawns: trim the sharp head and tail parts, slit the backs and remove the veins, rinse well, then add a squeeze of lime or lemon.
  2. Roughly chop the shallots and garlic (with a chopper or a knife).
  3. Marinate the prawns with the seasoning powder, ground coriander, and the chopped aromatics; mix well and set aside.
  4. For the sambal matah: slice the shallots, bird's-eye chilies, lemongrass (white part only), and kaffir lime leaves (ribs removed) as thinly as possible.
  5. Add the salt, MSG, and sugar to the sliced sambal; mix while pressing, then rest for 10-15 minutes until the juices release.
  6. Crush the shrimp paste, cook it in hot coconut oil over low heat until fragrant, then pour it over the sambal; add a squeeze of kaffir lime and mix well.
  7. Fry the marinated prawns over medium heat, turning for even cooking; lift and drain once golden brown.
  8. Fry the remaining marinade crumbs over low heat, stirring constantly until golden; remove before they burn.
  9. Serve the prawns topped with the fried crumbs and the sambal matah.
