Luak Kue, Glutinous Sweet Potato Cakes with Coconut Filling

  1. For the filling, put 125 g palm sugar, 50 g granulated sugar, 1/2 tsp salt and 50 ml water in a saucepan.
  2. Add 3 pandan leaves torn into strips, then cook until the sugar dissolves and take it off the heat.
  3. Put 250 g grated coconut in a pan, then pour in the palm sugar syrup through a strainer.
  4. Cook over medium heat until the syrup dries up, then take it off the heat and set aside.
  5. For the dough, cut the sweet potato into chunks, then steam for 20 minutes or until tender.
  6. Mash the tender sweet potato until completely smooth, then weigh out 150 g to use.
  7. Add 250 g glutinous rice flour and 1/2 tsp salt to the sweet potato puree, then mix well.
  8. Pour in 110 ml warm water a little at a time while mixing continuously.
  9. Switch to kneading by hand until the dough comes together; add a little more water if it is still dry.
  10. Stop when the dough is neither too dry nor too soft.
  11. Line a tray or the steamer basket with banana leaf, then brush it with vegetable oil.
  12. Take about 40 g of dough, roll and compact it, then press the centre with your thumb to form a small cup.
  13. Fill it with the coconut filling, then seal the dough tightly around the filling.
  14. Press the cake flat; fine cracks on the surface are fine as long as it does not tear.
  15. Continue until all the dough is used, then arrange the cakes in the steamer.
  16. Steam for 20 minutes until cooked through.
  17. Every 3 to 4 minutes, lift the lid and wipe off the condensation so it does not drip onto the cakes.
  18. Once cooked, brush the surface of the cakes with vegetable oil.
  19. Brush a pan with a little vegetable oil, then fry the cakes over low heat until both sides are golden brown.
  20. Take them out and serve warm.
