Steps

  1. Prepare the toppings, grate 100 g cheese and flatten 150 g prunes by pressing them until thin and wide, then set aside.
  2. Prepare ingredients A by putting 40 egg yolks and 150 g caster sugar into a mixing bowl.
  3. In another mixing bowl put all of ingredients B, which are 350 g butter, 100 g margarine, 150 g caster sugar and 2 tbsp condensed milk.
  4. Beat ingredients A at high speed for about 15 minutes until the batter is fluffy, thick and leaves a trail.
  5. Beat ingredients B at high speed for about 10 minutes until the mixture is really light and soft.
  6. Preheat the oven to 180 degrees Celsius with top and bottom heat using the lower rack, heating it for 10 minutes.
  7. Move the egg batter into a large bowl, add the butter mixture, then stir until the two are perfectly combined since their colors are almost identical.
  8. Sift in 1 tbsp flour and 1 tbsp milk powder, then stir again until evenly combined while keeping the batter thick.
  9. Move about a third of the batter into a smaller second bowl, and prepare a third container to hold the batter for one layer.
  10. Grease only the base of a 20x20 cm pan that is 8 cm deep with margarine, line it with baking paper, and mark the middle since you are making two flavours.
  11. Put the empty pan into the preheated oven for 5 minutes.
  12. While waiting, weigh out 90 g of batter for one layer.
  13. Take out the hot pan, pour in the batter, then spread it evenly across the whole base.
  14. Bake at 180 degrees Celsius with top and bottom heat on the lower rack for 5 minutes.
  15. After five minutes change to 170 degrees Celsius with top heat, then bake for about 5 more minutes until the surface is browned.
  16. Take out the pan and pour in the prepared batter for the second layer, then repeat the same steps until all the batter is used.
  17. For the second layer onward, move the rack to the middle and change to 190 degrees Celsius with top heat, baking until the surface is browned.
  18. If bubbles appear on the surface, prick them straight away with a toothpick until they burst and deflate while the batter is still wet.
  19. Level the whole surface by pressing lightly, not too hard, or the cake will become dense and tough.
  20. If melted butter settles under the batter, just stir it until the pooled butter disappears before pouring into the next container.
  21. After a few layers, cover with batter first then add the prune topping on the left side and cheese on the right, following the mark on the pan.
  22. When the batter in the second bowl runs out, take another third from the main bowl after stirring it until smooth.
  23. Once the cake is getting tall, lower the temperature to 180 or 170 degrees Celsius to prevent too many bubbles from forming.
  24. For the last layer add the toppings again, then bake at 170 degrees Celsius with top heat on the middle rack until the surface is slightly browned.
  25. Move it to the lower rack, change to top and bottom heat, and bake again for 5 minutes.
  26. Let it rest for a while then turn the cake out of the pan.
  27. Turn the cake upside down to slice it and use a really sharp knife so the cuts are clean.
