Palm Sugar Layered Rice Cake

Steps

  1. Brush the moulds with vegetable oil so the cakes release more easily.
  2. Take a saucepan and cook 500 ml coconut milk, 1/3 tsp salt and 2 pandan leaves over low heat, stirring so the coconut milk does not split.
  3. Once it boils, take it off the heat and let it cool to lukewarm.
  4. Combine 100 g rice flour and 50 g tapioca starch in a bowl.
  5. Pour in two thirds of the lukewarm coconut milk; do not pour it in hot or the flour will cook.
  6. Whisk until the batter is smooth.
  7. Once no lumps remain, pour in the rest of the coconut milk, stir until evenly combined, then set it aside.
  8. In the same pan used for the coconut milk, put 150 g shaved palm sugar, 25 g granulated sugar, 1/4 tsp salt, 2 pandan leaves and 475 ml coconut milk.
  9. Cook over low heat until it boils.
  10. Once boiling, take it off the heat and let it cool to lukewarm.
  11. In another bowl, combine 100 g rice flour and 50 g tapioca starch.
  12. Pour in two thirds of the palm sugar coconut milk through a strainer, then stir until no lumps of flour remain.
  13. Pour in the rest of the palm sugar coconut milk, again through a strainer, then stir until evenly combined.
  14. Each time before ladling, stir the batter right down to the bottom so no flour settles.
  15. Spoon 1 tbsp of the white batter into each mould, then set them in a steamer with the water already boiling.
  16. Steam the first layer for 5 minutes over medium low heat.
  17. For the second layer, pour in 1 tbsp of the palm sugar batter.
  18. Steam again for 5 minutes.
  19. Carry on with the palm sugar batter for three layers, or adjust the number of layers to taste.
  20. Use the white batter for the last two layers.
  21. Steam the final layer for 10 minutes.
  22. Take them out and let them cool before unmoulding.
