Ingredients

Steps

  1. Finely chop the garlic by hand or with a chopper.
  2. Heat 200 ml of cooking oil over low heat, fry the chopped garlic until lightly golden, then strain and separate the fried garlic from the oil.
  3. Blend bird's eye chillies, 4 cloves of garlic, and water until smooth for the sauce.
  4. Transfer to a pot, add granulated sugar, salt, and bottled chilli sauce, then boil.
  5. Lower the heat and simmer for about 2 minutes, add the vinegar, stir well, turn off the heat, then transfer to a sauce container.
  6. Grate 800 g of peeled jicama using a blade-style grater so the shreds have texture.
  7. Snip 25 g of dried shrimp into coarse pieces with scissors.
  8. Heat a little vegetable oil, then saute the dried shrimp until fragrant and foaming.
  9. Add the grated jicama, salt, granulated sugar, and pepper, then cook until the seasoning soaks in and the jicama wilts, without adding any water.
  10. Add the fried garlic along with its garlic oil, stir until evenly combined, then turn off the heat.
  11. Transfer the filling to a strainer set over a bowl so the liquid drains off, then set aside.
  12. Mix the rice flour and tapioca starch, add salt, stir well, then pour in room temperature boiled water in stages while stirring until no lumps remain.
  13. Pour the batter into a non-stick pan through a strainer, then add the vegetable oil.
  14. Cook while stirring constantly; once the dough starts to clump, turn the heat to the lowest setting and keep stirring until the colour is even and it is cooked through.
  15. Take it off the stove, then keep working it with a sturdy spatula or with hands wrapped in plastic until the dough is smooth and satiny.
  16. Line the steamer rack with banana leaf, then brush it with the fried garlic oil.
  17. Dust the work surface with tapioca starch, take a third of the dough, coat it in starch, roll it into a long log, then cut it into equal pieces.
  18. Shape each piece by holding the centre and turning it while pressing the edges thin into a bowl shape, add the jicama filling, then close and seal the rim.
  19. Spray the whole surface of the chai kue wrappers evenly with water, then steam for 10 minutes.
  20. Brush the chai kue with garlic oil, sprinkle with fried garlic, then serve with the chilli sauce.
