Fried Choipan with Taro Filling

Steps

  1. Grate 600 g taro on the coarsest holes of a grater.
  2. Add the sugar, salt, mushroom stock powder and 5 tbsp vegetable oil to the grated taro and mix well.
  3. Transfer the taro mixture to a wide dish that fits in the steamer.
  4. Steam for about 20 minutes or until cooked through.
  5. Take it out and let it cool before stir frying.
  6. Heat some vegetable oil in a pan, then saute 50 g dried shrimp until fragrant.
  7. Lower the heat, then add the steamed taro.
  8. Cook over low heat, stirring until evenly mixed.
  9. Add a little more vegetable oil to loosen it, then add the pepper and 1 tbsp fried garlic and stir well.
  10. Add the finely chopped spring onion and celery leaves and stir briefly.
  11. Turn off the heat, take the filling out and let it cool before using.
  12. For the wrapper, put 115 g rice flour and 15 g tapioca starch in a bowl.
  13. Pour in 350 g room temperature boiled water and stir until no lumps of flour remain.
  14. Strain the mixture straight into a saucepan.
  15. Add 1/4 tsp salt and 1.5 tbsp vegetable oil.
  16. Turn the heat to medium low and stir constantly until the dough gathers into a mass with no wet looking patches left.
  17. Turn off the heat, then move the dough to a wider bowl.
  18. Knead the dough until smooth and glossy; wear several layers of plastic gloves because it is still very hot.
  19. Prepare the steamer tray and brush the banana leaf with fried garlic oil.
  20. Take a piece of the dough, dust it with a little tapioca starch, then roll it into a log.
  21. Divide the log into portions according to the size of choipan you want.
  22. Dust your palms with tapioca starch, then flatten each portion into a round sheet; do not make it too thin or the wrapper will split while frying.
  23. Add a spoonful of taro filling, then fold and seal the wrapper.
  24. Arrange the choipan on a tray lined with banana leaf.
  25. Spray the choipan with clean water before steaming.
  26. Steam for 10 to 15 minutes depending on the size and the thickness of the wrapper.
  27. Brush the steamed choipan with fried garlic oil.
  28. Move them to a plate and let them cool briefly before frying.
  29. Pan fry in a little oil, turning until both sides are lightly golden; do not fry too long or the wrapper turns hard.
  30. Sprinkle with fried garlic and serve hot with sambal.
