Choipan Steamed Jicama Dumplings

  1. Peel 500 g of jicama, then slice it thinly.
  2. Finely chop 5 cloves of garlic.
  3. Chop 30 g of dried shrimp that has been soaked.
  4. Heat a wok, add vegetable oil, then add the chopped garlic.
  5. Once the garlic is fragrant, add the chopped dried shrimp and saute until fragrant as well.
  6. Add the sliced jicama and cook until it softens.
  7. Once the jicama starts to soften, add 1 1/2 tbsp sugar, 1 tsp salt, 1 tsp ground white pepper, and 1 tbsp mushroom stock powder, which is optional.
  8. Stir until the seasoning is evenly mixed through the jicama.
  9. If the filling is too dry you can add a little water, but not too much.
  10. Taste it, then turn off the heat and set the filling aside.
  11. For the sauce, boil water in a pot, then add 5 large red chillies with the seeds removed, bird's eye chillies to taste, and 4 cloves of garlic.
  12. Boil for 4 to 5 minutes until soft so the sauce does not taste raw, then lift out the chillies and garlic.
  13. Add a little water to help with blending, then blend until everything is smooth.
  14. Transfer the sauce into a bowl.
  15. Add 4 tbsp sugar, 1/2 tsp salt, and the juice of 6 key limes, then stir until all the sugar dissolves.
  16. Add 150 ml of water, stir until even again, then taste and adjust the seasoning.
  17. For the wrappers, bring about 400 ml of water to a boil.
  18. Mix 200 g rice flour, 20 g tapioca starch, and 1/4 tsp salt, then stir the dry mixture first.
  19. Pour the boiling water straight into the flour mixture, then stir until it comes together.
  20. Let the dough cool down before working it again.
  21. Once it has cooled, add 3 tbsp vegetable oil and knead until the oil is well worked into the dough.
  22. Add 70 g of tapioca starch in two additions, then knead again until the dough is smooth.
  23. Dust with a little flour so it does not stick, then divide the dough into 4 balls.
  24. Take one portion of dough, roll it into a ball, then flatten it into a thin wrapper.
  25. Put a little jicama filling in the middle of the wrapper, then fold it over and seal it tightly.
  26. Bring water to a boil in a steamer, then steam the choipan for 15 minutes.
  27. Once cooked, brush the tops with fried garlic oil so they smell more fragrant.
  28. Serve the choipan with the dipping sauce you made earlier.
